Course Description

3 signature, delicious, and healthy soups: vegetarian and non-vegetarian!! Soups are an important part of Mediterranean / Persian meals. Any of them can be made in advance and will keep in the refrigerator or freezer as a quick and easy starter!

  1. Ashe Reshteh is the national vegetarian Persian soup, perfect for day-to-day cooking or for every gathering. It’s definitely a crowd pleaser. Main ingredients are vegetables, beans, lentils, and noodles, topped with fried onions and turmeric.
  2. Ash Salamati literally means The Healty Soup. A mixture of vegetables: dill, parsley cilantro, jasmine rice and other herbs and spices, with tiny meatballs. 
  3. Barley soup is delicious!! It’s a hearty, healthy cream-based soup made with chicken, barley, and carrots, topped with parsley or cilantro.
